The belly is the section of the pig that contains the spareribs and bacon. Salted pork, used frequently in clam chowder and baked beans, is made by simply covering the belly in salt and letting it cure. Salted and smoked belly is referred as bacon. Both items can be made very easily at home. Niman Ranch makes this unique cut available to those of you who like to experiment in the kitchen. |
