The term "filet mignon" is a French derivative; the literal meaning is small (mignon) bone-less meat (filet). In any language, filet mignon means "The King of Steaks" because of its tenderness and the way it seems to melt in your mouth. To impress your friends, you might casually drop into conversation the fact that filet mignon is cut from the small end of the tenderloin (called the short loin) which is found on the back rib cage of the animal. Because this area of the animal is not weight-bearing, the connective tissue is not toughened by exercise resulting in extremely tender meat. For an elegant presentation, top with fresh shiitake mushrooms sauteed in butter and herbs.

Niman Ranch ships your product fresh, never frozen. Other online
meat providers "flash freeze" but we think the freshest meat is
the best tasting meat. To ensure that your product arrives in perfect
condition, Niman Ranch will vacuum seal your meat emitting any oxygen that could
potentially contaminate it. Then, we place it in a reusable stryrofoam
cooler fitted with cold packs to keep the product at the appropriate
temperature till it arrives to your door. Once you receive your
product, remove it from the cooler and place in the refrigerator.
Shipping and Delivery Time
Niman Ranch orders placed before noon PST
are shipped overnight THE FOLLOWING DAY to arrive on the third business
day after receipt. Only if Rush Delivery is requested,
is Saturday delivery available.
For delivery before 10:30am, select Priority or Rush Delivery.
If a Drop Dead Date is entered when you check out, we will hold
your order to target delivery for the business day on or before
the date you specify (for example, if you wanted it delivered on someone's birthday which is in 10 days, you would put a drop-dead date for the requested arrival date).
